    Apple Pie Parfaits

    Ingredients:

    • 2 Granny Smith Apples, small dice
    • 1 Gala or other red sweet apple, small dice
    • 3 Tblsp Great Value Butter
    • 1/3 cup pure maple syrup
    • ¼ tsp. kosher salt
    • 1 tsp. cinnamon
    • ½ tsp. nutmeg
    • ½ cup raisins
    • 2 cups no-fat, unsweetened Greek Yogurt
    • ½ cup crushed Great Value whole wheat  cereal
    • Un-sweetened dried cranberries for garnish

    Directions:

    Melt butter in a large skillet over medium- high heat. Add apples and sauté for 7 minutes or until they begin to soften. Add maple syrup, salt, cinnamon, nutmeg, and raisins. Sauté another 10 minutes over medium heat until apples are tender and juices have thickened. In four parfait glasses, or wine glasses, layer 2 tablespoons apple mixture, ¼ cup yogurt, 2 tablespoons apple mixture, and ¼ cup yogurt, and another 1 tablespoon apple mixture. Top each parfait with crushed cereal and dried cranberries. Serve immediately or chill until ready to eat.  Serves 4.
