    California Egg and Spinach Wraps

    If you’re tired of the same old egg breakfast, try these hearty egg, spinach and avocado wraps. They’re guaranteed to hold you over until lunch, and they’re super nutritious thanks to the protein-rich eggs, calcium-rich cheese, and the spinach. Who knew veggies with breakfast could be such a hit.

    1 teaspoon canola oil
    3 ounces baby spinach (2 packed cups)
    Kosher salt and black pepper
    5 large eggs, beaten
    ½ cup shredded reduced-fat Cheddar cheese
    Four 8-inch whole wheat flour tortillas
    1 medium tomato, seeded and cut into ½-inch dice (about 2/3 cup)
    1 avocado, pitted, peeled, and thinly sliced

    1. Heat the oil in a large nonstick skillet over medium heat. Add the spinach and cook, stirring occasionally, until wilted, about 3 minutes. Season with salt and pepper to taste. Add the eggs and cheese and cook, stirring frequently, until the eggs are set, 2 to 3 minutes.
    2. Stack the tortillas on a microwave-safe plate, and heat in the microwave, uncovered, until warmed through, 30 to 45 seconds.
    3. Assemble the wraps by placing a quarter of the egg mixture down the center of each tortilla. Top with the tomato and avocado, wrap burrito style, slice in half, and serve.

    Tip: To spice up your breakfast wrap, whisk a few pinches of chili powder and cumin with the eggs, or add some black beans.
