    Frozen Orange Mango Pops with Blueberry Swirl

    Makes 6 Servings

    Summertime and ice cream go hand in hand, but ice cream also goes hand in hand with a lot of extra saturated fat and calories. To keep your frozen treats slim, scrumptious, and filled with great nutrition, make them from scratch with 100% fruit juice, fresh or frozen fruit, and creamy and rich (but fat free) Greek yogurt.

    1 cup frozen mango chunks
    ¾ cup orange juice
    2/3 cup 0%-fat vanilla Greek yogurt
    1 tablespoon agave or honey
    1 cup frozen wild blueberries

    1. Combine the mango, juice, yogurt, and agave in a blender and blend until smooth. Pour evenly into six, 3-ounce ice pop molds leaving about a half-inch space on top.
    2. Meanwhile, place the frozen blueberries in a microwave-safe bowl and microwave on high until the blueberries thaw slightly and some of their liquid is released, 30 to 40 seconds.
    3. Place about 2 tablespoons of the blueberries and their juice into each pop mold until almost full. Use a chopstick or wooden skewer to push some of the blueberries down into the mango mixture. The pops should appear yellow with a blue layer at the top and blue streaks running down the sides.
    4. Place the lids over the molds and freeze until firm, about 3 hours. To remove the pops from the molds, run under warm water to loosen.

    Tip: Frozen fruit is convenient and always at the ready, but you can certainly use fresh fruit in this recipe instead.

    Tip: If you don’t own ice pop molds, make them yourself by dividing the fruit/juice mixture among six small paper cups. From there, simply cover each with a piece of aluminum foil, insert a craft stick through the center of each piece, and freeze.
