In honor of National Hispanic Heritage Month we’ve created this bright and refreshing Black Bean Mango Pico de Gallo. The combination of sweet mangos, spicy jalapeno and bright lime juice are a match made in heaven. Black beans provide a protein and fiber to give this spin on pico de gallo a major nutrition boost. Delicious on its own, this pico de gallo is also great served over grilled chicken, in grilled fish tacos or with baked tortilla chips. Perfect for entertaining, you can make this salad up to two days in advance. It will only get more flavorful as it ages.
Black Bean Mango Pico de Gallo

- 1 cup canned black beans, drained and rinsed
- 1 cup diced mango
- 2 roma tomatoes – diced
- 1 cup cilantro - minced
- ½ cup minced red onion
- 1 jalapeno – seeded and minced
- 1 clove garlic – grated
- juice of one lime
- salt and pepper to taste
- Place black beans, mango, tomatoes, cilantro, red onion, jalapeno and garlic in a medium bowl and toss to combine.
- Add lime juice and toss well.
- Season with salt and pepper to taste.
